Eggplant cheese bites

Ingredients

An eggplant cut into 2⁄3 cm slices
Olive oil
Mozzarella
Parmesan cheese
Basil leaves
Tomato basil sauce (in a jar)


Preparation

Place the eggplant slices on a baking sheet
Brush each side with olive oil
Put in the oven at 160 ° for about 45 minutes, turning them once. Monitor the cooking so that the slices are toasted but not burnt!
Let them cool
Spread the slices on a baking sheet
Spread a little basil tomato sauce on each slice
Add a basil leaf or half-leaf on each slice
Put 1 cm of mozzarella on each slice
Add Parmesan
Put in the oven at 180 ° 15 to 20 minutes approximately until the slices are well browned Remove from the oven and let them cool

When lukewarm, cut into the gratinated cheese to separate each slice of eggplant
