Caramelized Sweet Potato
a family recipe which was one of my late mother's favorites
Ingredients:
2 medium sweet potatoes(or a large one, if possible use the pink variety, they are sweeter if not all varieties are suitable.)
5 tablespoons caster sugar
100 g butter (sweet or salted)
A small quantity of frying oil
Preparation:
Peel the sweet potatoes. Cut them in half if they are too large. Steam them for about 30 minutes or boil them. The potatoes should be cooked but firm.Let them cool and cut the pieces into 1.5 cm sticks.
In a large skillet pour the oil and butter and heat over high heat.
When the butter is melted place the potato sticks and fry on each side until they are golden brown.
Sprinkle the sugar over the potatoes and continue to fry, turning the sticks regularly until the sugar has caramelized.
Place the sticks in a dish, wait until they have cooled down and eat with your fingers!
