Icelandic red cabbage
Ingredients:
60 g butter2 spoonfuls of olive oil
Half of a sliced red cabbage
A large onion, finely chopped
An apple, peeled and cut into small pieces
Half a glass of apple cider vinegar
Two good spoonfuls of currant jelly
Three cloves
One cinnamon stick
200 g blueberries
Pepper
Salt
Preparation:
Melt the butter in the olive oil and add the chopped onionFry over high heat for two minutes then over moderate heat for 10 minutes
Add the grated cabbage and cook over high heat for 2 minutes
Then add the apple, half a glass of vinegar, currant jelly, cloves, cinnamon stick, pepper and a little salt
Add a small glass of water
Cook 45 minutes over medium / low heat
5 minutes before the end of cooking add the blueberries and mix well
Adjust the seasoning
Traditionally served with breaded roasted lamb chops and steamed potatoes.
